With the start of the school year just around the corner, we thought we’d share our blueberry chutney recipe that can be used as a healthy after school snack served with crackers and cheese or as a relish to go with meats or poultry for dinner. Blueberry Chutney
Servings: 4
Serving Size: 1/4 cup
Ingredients:
blueberries – 3 cups
dried cranberries – 1/4 cup
fresh ginger, minced – 1/4 tsp
ground cinnamon – 1/8 tsp
lemon juice – 1 tbsp
onion, minced – 1/4 cup
raspberry vinegar – 1/2 cup
sea salt – 1/4 tsp
sugar – 1/2 cup
Directions:
1. Combine the vinegar, sugar, onion, ginger, cinnamon, lemon and salt in a saucepan, bring to a boil and simmer 15 minutes.
2. Add 1 cup of the blueberries, and the cranberries. Simmer 20 minutes, stirring frequently.
3. Add the remaining 2 cups blueberries and simmer another 10 minutes.
